Green Beans in Sour Cream Sauce
Recipe by: Doris Creen - Kansas
Servings: 4 to 6
1 1/2 pounds green beans
1 medium-size onion, sliced
1 teaspoon salt
1 cup boiling water
2 tablespoons flour
2/3 cup dairy sour cream
1 teaspoon lemon juice
1 tablespoon minced parsley
1/8 teaspoon pepper
Snap off ends of beans; wash, cut diagonally in 1-inch slices. Cook green beans and onion with 1/2 teaspoon salt in boiling water in saucepan until tender. Drain; reserve 1/2 cup liquid.
Blend flour with sour cream, lemon juice and reserved liquid. Cook over low heat, stirring constantly, until sauce thickens. Stir in parsley, 1/2 teaspoon salt and pepper. Pour over beans. Serve immediately.
