Harvard Beets- (Microwave recipe)
1 can or jar (16 oz.) sliced or diced beets
1/3 cup sugar
1 Tbls. cornstarch
1/4 tea. salt
1/4 cup cider vinegar
1 Tbls. butter or margarine
Drain beets and reserve 1/2 cup liquid.
Combine sugar, cornstarch and salt in a 1 quart glass casserole.
Stir in vinegar and 1/2 cup of the reserved beet liquid.
Cook in micro 3 to 4 minutes on High, or until mixture boils and thickens slightly. Stir twice.
Add beets and butter to thickened sauce; stir. Cook on high 2 to 3 minutes, or until thoroughly heated; stir.
3-4 servings.
