Maquechou

6 bacon slices
4 cups fresh or frozen sweet corn (if frozen, thaw)
3 Tbl. butter
1 onion chopped
1 red sweet pepper, seeded and diced
2 large tomatoes, peeled and chopped
2 tsp. sugar
1 Tbl. minced fresh basil
1/2 tsp. crushed summer savory
3 drops hot pepper sauce, or to taste
1/2 cup water
1/2 cup light cream
salt and pepper to taste
1/4 cup chopped chives for garnish


In a large frying pan cook bacon until crisp. Drain, crumble and set aside. Pour fat from pan, reserving 1 Tbl. for flavor, if desired.

Add butter to pan and melt over medium meat. Stir in corn, onion, red pepper and cook for 5 minutes. Stir in chopped tomato, sugar , herbs, hot sauce and water. Simmer until tomatoes are cooked down and corn is tender, about 20 minutes.

Stir in cream and half of the crumbled bacon and simmer for 10 more minutes. Serve hot and garnish with chives and reserved bacon.
