Mushroom Rice Pilaf
1 cup sliced fresh mushrooms
3 tablespoons margarine or butter
1 cup regular long-grain rice
1 (14 1/2-ounce) can beef broth
1/4 cup water
3/4 cup Sliced Almonds, toasted
2 tablespoons chopped fresh parsley
Cook and stir mushrooms in margarine or butter in large skillet over medium-high heat for 3 to 4 minutes.
Add rice; cook and stir 3 minutes.
Add broth and water; heat to a boil.
Reduce heat; cover and simmer 20 to 25 minutes or until liquid is absorbed.
Stir in almonds and parsley.
Serve immediately
