Shiitake Relish

10-12 oz. shiitake mushroom caps, wiped clean
olive oil for brushing
2 tsp. finely chopped shallots
2 tsp. finely chopped garlic
2 tsp. pure olive oil
2 Tbsp. mixed herbs, chopped (thyme, rosemary, sage, oregano, parsley, etc.)
salt and fresh ground pepper to taste
1 Tbsp. lemon juice
2 Tbsp. balsamic vinegar
1/4 cup extra virgin olive oil


Brush mushroom caps with oil. Grill on both sides until marked and cooked through. Remove from grill and julienne. Set aside.

Heat 2 tsp. olive oil in sauté pan. Add shallots and garlic and sweat a few minutes until soft. Set aside to cool.

Combine mushrooms, shallot-garlic mixture, and herbs. Whisk together vinegar, lemon juice, and oil. Pour over mushrooms. Season to taste with salt and pepper.

Makes 6 servings
