Shiitake Stir-Fry

1/2 lb. medium sized shitakes
1 tbsp. vegetable oil
1 1/2 tbsp. soy sauce
1 tbsp. sugar
pinch of salt
1/4 tbsp. hot pepper, chopped and dried


Wash mushrooms gently. Separate stems from caps and discard. Holding a knife at a 45 degree angle, score the caps with diagonal cuts.

Heat oil in wok or skillet. Add mushrooms and stir fry over medium heat for about 3 minutes.

Add soy sauce, sugar and salt. Stir fry until liquid has evaporated. Sprinkle with hot pepper and serve.
