Slice of Mushroom Heaven
Hold the Toast

1 lb mushrooms, sliced
4 Tbsp butter
1/2 medium onion, chopped fine
1 clove garlic, crushed
1/4 cup dry white wine
1 tsp. lemon juice
1.5 cups half and half
3 cups Gruyere, shredded
3 eggs
1 tsp. salt or Vege-Sal
1/4 tsp. pepper


Preheat oven to 350°F.

Melt the butter in a heavy skillet, over medium heat, and start the mushrooms, onion, and garlic frying in it. Once the mushrooms are limp, turn up the heat a bit and boil off the liquid that exudes from them. Stir in the white wine, and cook until that's boiled away, too. Stir in the lemon juice, and turn off the heat. Transfer into a large mixing bowl. Stir in the half and half, eggs, S&P, and two cups of the cheese.

Spread in an 8x8 baking pan you've sprayed with non-stick spray. Sprinkle the rest of the cheese over the top. Bake about 50 minutes, or until the cheese on top is golden. There's about 33 grams of usable carb in the whole recipe.

This was good hot, but I actually like it better cold, and when it's cold it cuts in nice neat squares. I think it makes a nice breakfast or lunch, and it's a fine side dish -- but serve small portions; it's *very* rich and filling. Would make a good vegetarian main course, too.
