Mushrooms and Onions Aloha
1 lb. fresh mushrooms
3 large sweet onions
1 small clove garlic
1 cup tarragon vinegar
1 tbsp. sugar
1/2 tsp. salt
1/2 tsp. pepper
Wash mushrooms and remove the stems. Slice the onions into 1/4 inch-
thick rounds. Slice the garlic clove thinly.
Combine the remaining
ingredients for marinade.
Put the
mushroom caps, onions and garlic into a large jar with a lid. Cover
with the marinade mixture. Screw the top on the the jar tightly. Mix by
turning the jar upside down several
times.
Refrigerate 24 to 30 hours before serving. Serve cold with toothpicks.
About 3 cups.
The mushrooms and onions will stay crisp for several weeks in the refrigerator.
