Mustard Mushrooms
serves 4
1/3 cup butter
1 small onion, chopped
1 lb. mushrooms, sliced
1/3 cup dry vermouth
1 1/2 Tbl. Dijon mustard
1/2 tsp. dried thyme
salt and freshly ground pepper
Cook onion in butter for 10 minutes. Increase heat to medium-high and sauté mushrooms 5 minutes.
Add vermouth and stir until liquid is almost evaporated (about 2 minutes.)
Blend in mustard, do not boil. Season.
