Okra with Tomatoes
Serves 6
1 1/2 lbs. fresh, tender okra
6 Tablespoons Olive oil
4 cloves Garlic, peeled and finely chopped
2 medium Onions, peeled and cut into 3/4 inch dice
2 medium tomatoes, peeled and coarsly chopped
1 teaspoon ground coriander
1 1/2 teaspoons salt or to taste
1/8 teaspoon freshly ground black Pepper
Wash the okra and trim it.
Heat oil in a 10-12 inch frypan over a medium heat. Put in garlic and onions, stir and fry until
onions turn translucent, turning heat down if necessary. Put in okra, stir and fry another minute.
Now put in all other ingredients plus 4 fl. oz. water and cook gently until okra is tender but not mushy, about 15 to 20 minutes.
Larger pods will take a little longer.
Serve hot ot cold.
