Onion-Cheese Casserole
2 cups finely crushed Club crackers, divided
1/2 cup butter divided
3 lbs. yellow onions,thinly sliced
2 Tbls. flour
1/2 tsp. salt
1/2 tsp. pepper
2 Cups milk
1/2 lb. Velveeta, cubed
Preheat oven to 350.
Spread 1 Cup crumbs in 8x11" baking dish.
In large skillet, melt 1/4 Cup butter,add onions;cook over medium heat until
tender. Spoon onions over crumbs, in pan.
In same skillet, melt remaining butter, stir in flour, salt, and pepper
;cook 1 minute.
Gradually add milk,stirring constantly, cook until
thickened.
Add cheese,stir until smooth.
Pour cheese mixture over onions.
Sprinkle with remaining crackers.
Bake 30-35 min.until golden.
