Cheesy Onion Casserole

4 eggs
3 cups low-fat milk
1/4 tsp. ground nutmeg
1 loaf French bread (about 16" long), cubed (about 8 cups)
2 tbl. olive oil
3 large onions (about 1 1/2 lbs.), sliced
1/2 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
2 cups shredded Cheddar cheese


Preheat oven to 350 degrees. Grease a 9x13x2" metal baking pan.

Whisk together the eggs, milk and nutmeg. Add bread cubes and let stand for 30 minutes, stirring occasionally.

Heat oil in a large non-stick skillet. Add onions, sugar, salt and pepper. Cook over medium-low heat until onion is very tender, about 15 minutes.

Spoon half of the bread mixture into prepared baking pan. Top with half of the onion mixture. Repeat with the remaining bread mixture and onion mixture. Sprinkle with shredded cheese.

Bake 45 minutes or until puffed and golden.
