Sherried Cheese Onions

24-26 small boiling onions
2 tsp. salt
2 tbl. butter or margarine
2 tbl. flour
1 1/2 cups milk
1/2 cup (2 oz. ) shredded cheese
1 1/2 tbl. dry sherry


Peel onions; place in a large saucepan. Add several inches of water; sprinkle with salt, and bring to a boil. Reduce heat, and cook 10-15 minutes or until tender. Drain well, and place onions in an 8 inch square baking dish.

Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Add cheese, stirring until cheese melts and sauce is smooth. Stir in sherry, and pour sauce over onions.

Bake 350 oven for 20 minutes. 6-8 Servings
