Swiss Onion Quiche

(12 Servings)
1 (9-inch) prebaked pie shell
4 Tbsp. butter
4 onions, sliced thinly
1 tsp. salt
1 tsp. cracked pepper
1 cup shredded Gruyere cheese
2 eggs
2 egg yolks
1 1/2 cups half and half
1/8 tsp. nutmeg
Preheat oven to 350° F.
Melt butter; add onions.
Cover and steam until onions are soft.
Season with salt and pepper.
Drain and arrange onions in pastry shell.
Sprinkle with grated cheese.
Beat eggs and yolks, cream and nutmeg together and pour into shell.
Bake for about 30 minutes or until set and puffed.
Let set for about 5 minutes before cutting.
