Onion Tart

5 onions, sliced
2 tbsps. olive oil
2 tbsps. butter
3 tbsps. sage leaves
8 oz. ready-made puff pastry
5 oz. soft goats' cheese
Cracked black pepper


Preheat oven to 400.

Place onions, oil, butter and sage in a saucepan over low heat. Cook for 12 minutes or until onions are soft and golden.

Roll out pastry on a lightly floured surface to 1/8" thick. Trim to a 7x10inch rectangle and place on baking tray.

Spread goats' cheese over pastry and top with black pepper. Spoon onions over goats' cheese.

Bake for 20 minutes or until pastry is puffed and golden.
