Vidalia Onion Relish
1 1/2 gallons Vadalia onions
1/2 cup salt
1 quart cider vinegar
1 teaspoon turmeric
1 teaspoon pickling spice
4 ounces chopped pimientos
4 1/2 cups sugar
Grind onions (approx. 10 lbs.) to equal 1 1/2 gallons. Add salt and let stand 30 minutes.
Place in a collander and squeeze out excess juice.
Place in a large kettle and add vinegar, sugar, spices tied in a cheesecloth and pimento (optional). Stir
together and bring to a boil. Boil for 30 minutes, stirring often. Pack into hot sterilized jars.
Water bath for 10 minutes.
