Beer Battered Onion Rings

3 large Vidalia onions (or other sweet white onion)
Ice Water for Soaking Onionsbr> 2 1/4 cup Flour
1/4 cup Cornmeal
2 tsp. Baking powder
1 tsp. Salt
1 can Beer
1 large Egg, beaten
Oil for frying


Heat oil for frying to 375 degrees.

Peel onion, slice 1/2" thick and separate into rings. Place in ice water for 30 minutes; remove and drain on paper towels.

Combine flour, cornmeal, baking powder and salt, stirring well; add beer and beaten egg. Stir until well blended.Chill batter 15 minutes.

Dip onion rings into batter, coating both sides.

Fry a few at a time in deep fryer @ 375 degrees for about 5 minutes; should be browned and crispy. Drain well on paper towels.

For thinner batter, use 1 1/2 cup of beer.
