Sweet Onion Relish
Cooking Light - July 1994
Vegetable cooking spray
4 3/4 cups chopped Vidalia or other sweet onion
1 cup thinly sliced Vidalia or other sweet onion
1/4 cup minced celery
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon celery seeds
1/8 teaspoon pepper
1/2 cup cider vinegar
1/4 cup water
1 (2 ounces) jar diced pimiento, drained
Coat a large saucepan with cooking spray; place over medium high heat until hot. Add onions and celery, and sauté 10 minutes or until tender.
Stir in sugar and remaining ingredients; bring to a boil. Reduce heat, and simmer, uncovered, for 25 minutes, stirring frequently.
Let cool.
Spoon into a bowl; cover and chill 8 hours.
Yield: 4 cups (serving size: 1/4 cup).
Serving Ideas : Serve cold or at room temperature.
