Swedish Pea Soup
1 lb. yellow dried peas
warm water
1 ham bone with some meat or smoked pork hocks
1 large grated carrot
3 ribs of celery, cut up
1 medium onion, chopped
season to taste
Soak peas in warm water for 1 hour.
Add ham bone and water to make 3 quarts. Simmer until peas are soft. If whole peas are used, skim the shells off as they rise.
Add vegetables and cook until tender. Season to taste. Add water as needed.
