Marli's Very Own Stuffed Peppers
1 lb. extra lean ground beef (or chicken, veal or pork)
1 medium onion, diced
3 cloves garlic, minced
6 large green, red or yellow peppers, cored
Bits of pepper removed when slicing off tops, chopped
2 stalks celery, diced
1 cup raw rice, cooked with salt and Italian seasoning
1 (14-15 oz.) can diced tomatoes
Brown beef and drain all fat.
Saute onions and garlic until tender. Add peppers and celery.
Return beef and cooked rice. Add tomatoes and season with salt pepper, Italian seasoning, whatever you like.
While meat mixture is cooking, bring a large pot of water to a boil. Blanch peppers just before they are needed so they are still hot.
Place them in the water and fill the cavity with water and boil about 2 minutes.
Drain.
Fill pepper with meat mixture and serve.
