Peppers: Grilled Sausage and Pepper Pizza

Grilled Sausage and Pepper Pizzas

3/4 pound lean hot or sweet Italian sausage
1/2 cup Italian dressing
2 teaspoons fresh rosemary, chopped, or 1 teaspoon dried rosemary, crumbled
2 medium green bell peppers, seeded, cored and quartered
1 large sweet onion, cut crosswise into 1/2-inch slices
2 (8-ounce) packages Italian bread shells or 4 sandwich-size English muffins, split
1 cup marinara or pizza sauce
4 ounces mozzarella cheese, shredded
Grated Parmesan cheese


Lightly brown sausage in skillet, then cover and cook over medium heat until no longer pink but taking care not to overcook.

In small bowl, combine Italian dressing and rosemary. Split sausage lengthwise. Brush sausage, peppers and onions with about half of Italian dressing.

Grill sausage and vegetables over medium coals, turning once, until sausages are browned and vegetables are tender, about 5-7 minutes.

About 2 minutes before vegetables and meat are done, grill tops of
bread shells or cut sides of English muffins until toasted lightly. Remove bread, sausage and vegetables from grill.

Quickly slice sausage and peppers into large chunks and separate onion into rings. Turn bread, toasted side up, and spread with marinara sauce. Top with sausage and vegetables, drizzle with remaining Italian dressing, sprinkle with mozzarella cheese and, finally, Parmesan cheese.

Return pizzas to grill. Cover and grill until cheese melts and underside of bread is toasted, about 1 minute. (With uncovered grill, it will take just a bit longer to melt cheese, or finish melting cheese in broiler.) Garnish with fresh sprigs of rosemary, if desired. Makes 4 servings.
