Peppers: Italian Pepper Salad

Italian Pepper Salad (Canned)

1 peck peppers -- diced or in strips
1/2 bunch celery -- sliced
1 pint cooking oil
1 quart cider vinegar
1 quart water
1/2 cup sugar
1/3 cup pickling salt
2 teaspoons oregano
1/2 teaspoon garlic powder


In a large container (not aluminum), mix everything together except the peppers and celery thoroughly. Now mix in the vegetables. Let stand for 24 hours, stirring mixture every so often.

Next day, heat the mixture to boiling point. Ladle into hot sterilized jars and seal.

Makes 15 pints
