Jalapeno Relish
6 cups jalapeno peppers, canned or fresh
3 large cucumbers
2 large onions
1/3 cup salt
cold water
5 1/4 cups sugar
3 cups cider vinegar
4 teaspoons pickling spice
Finely chop peppers, cucumbers and onions.
Add salt and place in a glass container.
Cover with ice water and add 1 tray of ice cubes.
Cover and chill 2 hours.
Drain thoroughly, pressing down on vegetables to remove excess liquid, set aside.
In a large pan combine sugar and vinegar.
Tie pickling spices in cheesecloth and add to pan.
Bring to a boil and simmer for 15 minutes.
Add vegetables and return to a boil and simmer for 10 minutes.
Remove and discard spice bag.
Pack relish into hot sterilized jars and process in a water bath for 10 minutes.
