Mexican-Style Stuffed Peppers
4 peppers, halved and cleaned
1-1.5 lbs ground beef (can use less beef and add a little chorizo for more flavor)
1 small onion, diced
2 stalks celery, diced
olive oil
1 (4 oz) can diced green chiles
1 (8 oz) can tomato sauce
1 packet taco seasoning
garlic, salt and pepper to taste
4 oz shredded co-jack cheese
French's french fried onions (you know, the fried onions in a can)
Blanch the peppers by adding them to boiling water and cooking for 5-7 minutes, remove from water, salt and let dry.
Saute the onion and celery in heated oil for 3-5 minutes. Add ground beef, season with garlic, pepper and salt and cook until well browned. Drain fat. Leave meat mixture in pan. Add can of green chiles, tomato sauce and taco seasoning to pan, mix well.
Place green pepper halves in a 9x13 pan, fill each pepper with meat mixture. Top each pepper with shredded cheese.
Put peppers in oven (preheated to 350), bake for 30-35 minutes, remove from oven, sprinkle tops with French friend onions, return to oven and bake until the cheese is melted and onions are cispy loooking (about 10 minutes) (be careful, the little onion things can burn, so just keep your eye on them) Garnish mine with sliced green onions, chopped tomatoes and sour cream.
