Roasted Poblano Butter

1 large poblano chili or other fresh mild green chili (about 6 ounces)
1/2 cup (1 stick) butter, room temperature
1/4 cup chopped fresh cilantro
1 tablespoon fresh lime juice


Roast chili over gas flame or in broiler until blackened on all sides. Wrap in paper bag and let stand 10 minutes. Peel, seed and coarsely chop chili.

Blend butter in processor until smooth. Add chili, cilantro and lime juice and puree, stopping occasionally to scrape down sides of work bowl. Season to taste with salt and pepper. (Can be made 3 days ahead; chill.)
