Stuffed Peppers

Stuffed Peppers

2 lbs. ground beef
5 medium green peppers (stem, seed and chop one pepper)
1 red pepper, chopped
1 yellow pepper, chopped
1 large onion, chopped
1 qt. Italian stewed tomatoes
2 cups minute rice
1 large jar V-8 veggie juice


Preheat oven to 350.

Brown hamburger; drain.

Add chopped onion, and chopped peppers, stewed tomatoes, rice, and enough juice to mix it up.

Cut tops off of remaining 4 green peppers and scoop out seeds and membrane. Place in a large baking dish, and fill with mix.

Pour remaining juice over "stuffed peppers" and bake at 350* for 40 to 60 minutes depending on size of peppers.
