Sweet Red Pepper Sauce

3 tbsp olive oil
3 large red bell peppers, stemmed, seeded, and chopped
2 large onions, chopped
2 cloves garlic, minced
salt and freshly ground pepper to taste
2 tbsp chopped fresh parsley
Heat oil in large, heavy skillet over medium heat. Add peppers, onions, and garlic; saute until onion is golden, stirring to prevent burning, about 15 minutes or longer. Transfer to blender or food processor and puree. Stir in seasonings and parsley. Serve warm
