Turkey Stuffed Peppers

4 large green bell peppers
1/2 lb. ground turkey
1/2 onion, chopped
1 celery rib, chopped
1 tsp. celery seeds
1/8 tsp. pepper
1/2 cup converted rice
1 (15 oz.) can tomato sauce, divided
3/4 cup shredded cheddar cheese, divided
1/2 cup Burgandy or other dry red wine


Preheat to 400. Slice tops off peppers and remove seeds.

Place peppers in a deep 3 quart baking dish.

Combined turkey (uncooked), onion, celery, celery seeds, pepper and rice; mix well. Add 1/2 cup of tomato sauce and 1/2 cup cheese, mixing well.

Stuff peppers with meat/rice mixture.

Mix remaining tomato sauce, cheese, and wine. Pour over and around peppers. Cover dish with foil and bake 45 minutes.

Remove foil and reduce temperature to 375 and bake 30 additional minutes, or until rice is tender. Baste with sauce as needed during last baking session.
