Aunt Minnie’s Bread and Butter Pickles

6 qt. unpared cucumbers — sliced 1/8 inch thick
6 tsp salt
1 qt vinegar
2 cups water
1 tblsp celery seed
2 tblsp mustard seed
2 tsp curry powder
5 cups sugar
1 small red pepper diced (optional)


Sprinkle cucumber slices with salt. Cover with cold water and let stand overnight.

Drain off brine and wash cucumbers several times with clean water. Bring remaining ingredient to boiling point. Add cucmbers. and heat all for 4 min.* stirring constantly, being careful not to let the mixture boil.
(I find it takes more time {around 10-12 min.} – depends on the stove.) The slices should be transparent.
Pour into hot sealers, and seal at once.
