Potato Casserole
3 large potatoes
kosher salt, divided
garlic powder, divided
ground black pepper, divided
2 cups shredded Cheddar cheese (or other cheese)
1/2 cup butter
1 teaspoon dried onion flakes
about 1 pint light cream or half and half
Boil the potatoes for about 15 minutes. Peel the skin off and grate them. Layer half the potatoes in a 2-quart casserole. Sprinkle with salt, garlic powder, and pepper. Layer on a cup of cheese.
Put on the remaining potatoes, more salt, garlic salt and pepper, then the rest of the cheese.
In a small saucepan, melt butter with the onion flakes. Add the light cream or half and half. Let it heat thoroughly then pour over the potato mixture. Cook at 350 degrees for about 1 hour.
