Au Gratin Potatoes
5 oz finely shredded cheddar cheese
1/2 cup sour cream
1 can condensed cream of celery soup
1/4 to 1/2 ts thyme
1/4 ts pepper
6 medium russet potatoes, cooked, peeled and diced
1/4 cup sliced green onion
1/2 cup seasoned croutons, crushed
Heat oven to 350°. Grease 1-1/2 quart casserole.
In greased casserole, combine 1 cup of the cheese, sour cream, soup, thyme, and pepper; mix well. Stir in potatoes and onions; cover. Bake at 350° for 45 minutes.
In small bowl, combine crushed croutons and remaining 1/4 cup cheese. Uncover casserole; sprinkle with crouton mixture. Bake, uncovered, an additional 10 to 15 minutes or until bubbly and golden brown. Makes 12 servings.

2 lb Frozen hash browns, slightly thawed
1/4 c Margarine
1/4 Chopped onion
1/2 ts Salt
1/2 ts Pepper
1 lb Cheddar longhorn cheese
4 oz Diced green chiles (1 can)
8 oz Sour cream
10 oz Cream of chicken soup (1 can)
Non-stick spray
Cornflake crumbs
Mix all ingredients together (except cornflakes) and spoon into sprayed 13- by 9-inch dish. Top with cornflake crumbs. Bake at 350° 45 minutes. Makes 10 to 12 servings.
