Cheesy Potatoes

6 baking potatoes cooked, peeled and diced or sliced
1 onion chopped (size depends on your taste)
2 cups shredded cheddar cheese
1 pint sour cream
1/2 butter or margarine
1 tsp. salt
1/2 tsp. pepper


Preheat oven to 350 degrees.

In a large bowl toss potatoes and cheese. Sprinkle with salt and pepper.

In a pan, melt butter and saute onion till soft. Pour over potatoes and cheese and stir in sour cream. Put in a greased baking dish and bake 35-40 min, until gold and bubbly.

You can also put them in a crockpot/slow cooker. They do well if made in advance. If refrigerated, you probably will have to heat them longer.
