Potato Casserole: Mashed Potato Casserole

Mashed Potato Casserole

1 (5 pound) bag of potatoes
1 (8 ounce) box of cream cheese, softened
1 (8 ounce) container of sour cream
1 teaspoon of salt
1/4 teaspoon of pepper
2 tablespoons of margarine
1 cup of cheddar or Velveeta cheese, shredded
1 or 2 tablespoons of additional margarine
1/2 cup of additional cheddar cheese


Peel and dice potatoes. Cook in boiling, salted water until tender. Drain well.

In a large bowl, mash the potatoes. Add the cream cheese, sour cream, 2 tablespoons of margarine, and seasonings. Beat until smooth and fluffy. Stir in the cheddar cheese. Spoon potato mixture into a lightly greased casserole dish and top with dots of additional margarine.

Bake, covered, at 350F for 30 minutes. Sprinkle with additional cheese, if desired, and allow the cheese to melt.

You may make this ahead of time, refrigerate, and bake just before serving.
