Old-Fashioned Scalloped Potatoes

4 cups thinly sliced raw potatoes
1/4 cup finely chopped onion
4 tablespoons flour
1 teaspoon seasoned salt
1/4 teaspoon pepper
3 tablespoons chopped pimiento
3 tablespoons butter
2 cups scalded milk
1 cup grated American cheese, divided
1/2 pound slivered smoked ham or 4 ounces wafer-thin pepperoni slices


Layer 1/2 of the potato slices , half the onions, and pimientos in a buttered 8-cup baking dish. Season flour with salt and pepper, and sprinkle half over potatoes. Layer with half the ham or pepperoni and cheese; repeat layers, ending with potato slices and meat on top. Dot with butter and pour hot scalded milk over potatoes. Milk should be just visible between potatoes; do not cover them with milk. Cover with foil and bake at 375 F. for 45 minutes. Uncover and sprinkle evenly with remaining cheese and pimiento. Bake, uncovered, for 15 minutes longer or potatoes are tender and cheese is melted.
