Rae's Cheese Scalloped Potatoes
(Serves 4 - 6)

1/2 C. chopped onion
1/4 C. margarine
1/4 C. flour
1 tsp dry mustard
1/4 tsp. black pepper
2 C. Chicken stock
1 1/2 shredded sharp cheddar cheese
2 tsp. Worcestershire sauce (opt.)
1/4 tsp. cayenne powder (opt.)
4 C. thinly sliced potatoes


Cook onion in butter. Add flour, mustard, salt and pepper. Gradually add stock. Cook until thick, add cheese. Pour over potatoes (sliced into a big bowl) and mix well, making sure all potatoes are covered with sauce. (shake in a dash of cayenne and Worcestershire sauce for a bit more kick).

Put mixture into greased casserole and bake for 1 1/2 hours at 350 degrees. Sprinkle with more shredded cheese during last 10 minutes of baking. Test spuds with a sharp knife to make sure they are cooked. Depending on how thick or thin they are sliced will determine cooking time.
