Country Garden Potatoes

12 medium red potatoes
1/3 c milk
1 red or green bell pepper, or a combination of both for color, diced
1 onion, diced
1 tbsp minced fresh parsley
1/2 c grated sharp Cheddar cheese
1/4 c butter, melted
salt and pepper to taste
Boil potatoes in jackets until just tender, about 25 minutes. Leaving skins on, dice potatoes into bite-sized chunks and place in a shallow casserole. Moisten with milk.
Combine bell pepper, onion, parsley and cheese; mix well. Put mixture on top of potatoes. Drizzle melted butter over all and season, as desired, with salt and pepper.
Bake for 30 to 45 minutes at 400.
