Delmonico Potatoes

8 medium potatoes -- cooked and diced
1/2 cup butter
6 tablespoons flour
2 1/2 cups light cream
1/2 teaspoon salt
Pepper to taste
1 cup Cheddar cheese -- grated
1/2 cup dry bread crumbs
Preheat oven to 400 F. Butter a 2-quart baking dish. Place potatoes in dish and set aside.
In a saucepan, over low heat, melt 6 tbsp. of butter and blend in flour slowly. Do not brown. Slowly add the cream, stirring constantly. Add salt and pepper; bring almost to a boil.
Pour over potatoes. Top with cheese. Sprinkle with bread crumbs and dot with remaining 2 tbsp. butter.
Bake for 20 to 30 minutes or until bubbly.
Serves 6
