Potato: Golden Mashed Potatoes

Golden Mashed Potatoes

5 large Yukon Gold Potatoes, peeled and chopped
1 medium onion, peeled, quartered and sliced
4 Tbsp. butter
1/2 tsp. sea salt
1/4 to 1/2 tsp. chili powder
1/4 tsp. course ground black pepper
1/4 to 1/2 tsp. garlic powder
1/4 to 1/2 cup warm milk


Cook potatoes in water until tender.

While potatoes are cooking, saute onion in a bit of oil and butter over medium heat until browned. Stirring almost constantly. This will take some time so be patient and resist the urge to turn up the heat or the onions will burn. Place in a small bowl and set aside.

When potatoes are tender, set the burner to minimum and drain potatoes. Return to burner for a couple of minutes to allow potatoes to dry a little. Remove from heat; mash potatoes. Add butter and mash again. Stir in 1/4 cup of warm milk and spices. Stir in onions. Serve warm. If you want a creamier consistency, add more milk.
