Homemade Potato Chips

3 medium potatoes
cooking oil for deep fat
frying
salt, onion salt or garlic
salt (optional)


Scrub potatoes. Use a vegetable peeler to cut unpeeled potatoes lengthwise into very thin slices. Pat potato slices dry with paper towels.

In a heavy saucepan, fry potato slices, a few at a time, in deep hot oil (365 degrees) for 1 1/2 minutes or until crisp and golden brown. Drain on paper towels. Sprinkle hot potato slices with salt, onion salt or garlic salt to taste, if desired.

Makes about 7 1/2 cups.



Homemade Potato Chips

4 medium potatoes, peeled
vegetable oil
imitation butter-flavored salt


Slice potatoes into very thin slices and place in ice water until slicing is completed. Drain potatoes well; pat dry.

Heat 1 inch of oil to 375 degrees in a large skillet. Fry potatoes, a small amount at a time, 2 minutes or until golden; drain well on paper towels. Sprinkle with salt. Yields 6 to 8 servings.
