Make-Ahead Mashed Potatoes

9 large red potatoes, baked
1/2 cup unsalted butter, softened
12 oz. cream cheese, softened
3/4 cup sour cream
Hot milk, as needed
Salt and freshly ground pepper
2 Tbl. unsalted butter, melted


Cut hot baked potatoes in half and scoop out insides into a large bowl. Can use a ricer, if desired. Beat in 1/2 cup softened butter, cream cheese, and sour cream with an electric mixer. If mixture seems sticky, add hot milk. Season to taste.

To serve at another time, put mixture into a buttered casserole and pour 2 tablespoons melted butter over. Let cool, cover, and refrigerate for up to 48 hours.

To reheat, let casserole come to room temperature (this takes a while). Preheat oven to 300 degrees F. Bake potatoes, uncovered, around 30 minutes or until thoroughly heated.
