Make-Ahead Mashed Potatoes

12 potatoes (about 3 1/2 lbs.)
1/4 tsp. salt
4 green onions
1 four oz. (125 g) package cream cheese, at room temperature
1 cup light sour cream
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
pinch nutmeg
2 tbsp. butter
1/4 cup freshly grated Parmesan cheese


Place peeled in a saucepan. If potatoes are large, cut in half so they are all approximately the same size. Cover potatoes with water and add 1/4 tsp. salt. Cover and bring to a boil. Cook potatoes until tender, about 20 minutes.

Meanwhile, butter a 10 cup casserole dish. Thinly slice green onions and place in a small bowl. Cut cream cheese into small pieces and add to onions along with sour cream and seasonings.

Drain potatoes. Place in a mixing bowl with butter. Mash with a potato masher or fork. Add cream cheese mixture and beat with an electric mixer until light and fluffy. Spoon mixture into buttered dish. Smooth top and sprinkle with Parmesan cheese. (If making ahead, cover and refrigerate at this point.

Preheat oven to 350F. Place casserole dish in center of oven. Bake potatoes, uncovered until hot and golden, about 40 to 50 minutes.
