Mixed Potatoes with Herbs and Grain Mustard

1 large Yukon Gold Potato
1 large sweet potato
1 large purple potato or 2-4 red skin potatoes
1/4 cup olive oil
1 T granular or Dijon Mustard
1 tsp each dried basil, tarragon, thyme, rosemary, oregano, black pepper, salt, and dill
Dice potatoes into inch cubes. (sweet potatoes just a tad bigger as they bake quicker) Add all ingredients and mix well and put on baking sheet and place in 375 degree oven for 30 minutes. Garnish with fresh dill or basil.
