Potato: Raclette Spuds

Raclette Spuds

2-3 Tbsp. cooking oil (or olive oil)
2 big new potatoes, either red skinned or white skinned (baked partially in the microwave oven...and then chopped into 1/2" dice)
1/2 large onion, chopped
1 jalapeno pepper, seeded and minced
1 to 1 1/2 Cups of diced ham
1 C. shredded Swiss cheese
seasoned pepper (to taste)
onion powder (sprinkle)


Heat the oil over moderately high heat, toss in the cubed potatoes and brown lightly. Add the chopped onion and sprinkle with seasoned pepper. Add minced jalapeno and stir fry for a while until the spuds are toasty brown and onions are cooked.

Add the chopped ham and keep stirring until it's all looking good enough to eat. Sprinkle shredded Swiss Cheese over all and slip under the broiler for about 5 minutes or until it is all melted and bubbly.

Serve with braised spinach (topped with toasted pine-nuts and corn kernels), green salad (ranch dressing along side), sliced tomatoes garnished with coarse salt and dried basil, and a nice slice of toasted Cheddar-Beer bread.
