Roasted Red Potatoes and Chipotle Sauce

3-5 chipolte peppers from a can of chipolte peppers in adobe sauce (quantity depends on your taste preference)
2 cups mayonnaise (not Miracle Whip)
1 cup sour cream
2 lbs. red potatoes (approximately)
vegetable oil to coat potatoes
Cajun seasoning (enough to coat cut-up potatoes)


Preheat oven to 425 degrees F.

On a cutting board cut up red potatoes into one inch squares. Then in a big bowl toss the potatoes and oil until the potatoes are coated. Add the Cajun seasonings to desired spicyness (2-3 tblsp). Place coated potatoes on a cookie sheet and roast them until they are tender (about 25-35 min). Let cool for a few minutes and then serve with chipolte sauce (recipe follows).

Chipotle sauce: In a medium sized bowl, combine the mayo and sour cream. Then mince the chipotle peppers very finely and add to the mayo and sour cream mixture (It is also nice to add some juice from the can). Mix well. Chill until ready to use.
