Greek Potato Salad
2 lbs. red potatoes
2 Tbl. red wine vinegar
1/4 cup olive oil
1 Tbl. Dijon mustard
2 Tbl. chopped oregano
1/2 tsp. Kosher salt
1/4 tsp. black pepper
1/2 cup pitted Calamata olives
1 diced cucumber
1/2 cup roasted red peppers
1 small diced green pepper
1/2 cup diced red onion
4 oz. crumbled Feta cheese
1/4 cup chopped Italian parsley
Cut potatoes into 1" pieces and steam 12-14 minutes until tender. Set aside.
Whisk together vinegar, olive oil, Dijon mustard, oregano, salt and pepper. Add warm potatoes. Stir in olives, cucumber, red peppers, green pepper, red onion, Feta cheese and parsley. Mix well. Serves 8.
