Leigh's Roasted Potato Salad

3 lbs. red potatoes, washed and cubed
kosher salt and pepper to taste
2 Tbs. olive oil
3/4 c. mayo
3 Tbs. Creole mustard
1 tsp. dried dill
1 tsp. dried parsley
1 1/2 Tbs. minced fresh garlic
kosher salt and pepper to taste
2 hard boiled eggs, diced
10 slices bacon, cooked and crumbled


Preheat oven to 400 degrees F. Toss potatoes, salt and oil together to coat and bake for 45 minutes. Let cool completely. Mix everything together and let chill for several hours before serving to let flavors marry.
