Up-North French Potato Salad

1 - 1 lb. Pkg. Sliced Bacon (you can use less if you like)
3 lb. Small Red New Potatoes, unpeeled, cut into 1/4-inch slices
1 lb. Fresh or frozen Green Beans, cut into 2-3-inch pieces

Dressing:
1/2 Cup Olive or Salad Oil
1/4 Cup Tarragon Vinegar
1/4 Cup Canned, undiluted Beef Consomme
1/2 Cup Chopped Green Onions
1/4 Cup Chopped Fresh Parsley
1 Garlic Clove, crushed
1 tsp. Salt
1/2 tsp. Basil
1 tsp. Dry Mustard
1/2 tsp. Tarragon
Freshly Ground Pepper to taste


Cut bacon into 1 1/2" pieces. Cook or microwave until crisp. Discard drippings. Cook sliced potatoes in boiling salted water for 8-10 minutes after water comes back to a boil or until fork-tender (can be microwaved). Drain. Cook beans until tender-crisp.

For dressing, combine all ingredients and stir until well-mixed. Set aside.

Combine potatoes and beans in large bowl. Pour dressing over warm vegetables. Add bacon pieces and toss gently until well-mixed. Serve immediately or cover and keep at room temperature 2-3 hours before serving.

Makes 8-10 servings.
