Speedy Microwave Potatoes

4 baking potatoes -- oval shaped (about 2 pounds total)
Butter margarine or Sour Cream


Scrub potatoes and pierce with a fork.
Arrange about 1 inch apart on a large microwave-safe plate. Microcook on 100% power (high) for 12 to 18 minutes or till tender, turning the potatoes after 6 minutes. Remove from oven. Cover the cooked potatoes with foil and let stand 6 minutes while preparing the topping.

Using a sharp knife, cut an X in top of potato. Serve as directed in topper recipes or serve with butter or sour cream.

Makes 4 servings.

6 Ounces fully cooked chicken breast -- sliced cut into bite size pieces
3/4 Cup Monterey Jack cheese -- 3oz. shredded
Salsa
Sour Cream
ripe olives -- pitted sliced


Top potatoes with chicken and cheese. Return to oven and microcook 3 to 4 minutes more or till mixture heats through, giving dish a half-turn once. Top each with some salsa, sour cream and olives.

Pepperoni Pizza Potatoes

1 Jar pizza sauce – 8 oz.
3 1/2 Ounces pepperoni -- sliced
1 Recipe Speedy Microwave Potatoes
3/4 Cup mozzarella cheese – 3 oz. shredded
Parmesan cheese -- grated optional


In a microwave-safe 2-cup measuring cup, combine the pizza sauce and pepperoni. Cover with vented microwave-safe plastic wrap. Microcook on 100% power (high) for 3 to 4 minutes or till heated through, stirring after 2 minutes. Spoon over potatoes. Sprinkle with mozzarella and Parmesan, if you like.
Return to oven. Microcook for 2 to 3 minutes more or till the cheeses melt.

Makes 4 servings.
