Potato: Stuffed Baked Potatoes

Stuffed Baked Potatoes

10 medium potatoes
1 cube butter
1 TBS chopped green onion
1 pint sour cream
1 cup grated cheddar cheese


Bake potatoes at 400 degrees for one hour.

Let potatoes cool, cut in half. Scoop out pulp, leaving shell. Whip pulp with a little milk. Saute green onions in the butter. Let cool, then mix with sour cream, cheese and potato pulp.

Spoon potato mixture into potato shells. Bake 15-20 minutes at 375 degrees. Sprinkle with additional cheese and parsley.
