Uncle Wadz's Pierudgi's

For Filling:
4 large potatoes
1 chopped onion
salt & pepper to taste
1/2 pound of extra sharp cheddar cheese

For Dough:
2 eggs
1/2c water
2 1/2 to 3 cups of four (start with 2 cups, add accordingly)
1/2 t salt


For filling: Peel potatoes. Boil till cooked. Add onion, salt and pepper, and cheese. Mash well. Cool

For dough: Mix ingredients with hands in bowl. Dough must be pliable, not sticky.

Roll out dough. Cut into squares. Place a spoonful of filling into each square. Fold over and seal square, may have to use water to seal edges of dough.

Boil water. Add pierudgis about 5 at time into water. When they float to top remove with slotted spoon. Can be eaten at this point with melted butter and sauteed onions or can be placed into frying pan with vegetable oil to cover bottom. If frying brown both sides of pierudgis.
